Description
The wine is a Brut. It has a pale gold color and has a light oyster and sea-breeze aroma on the nose. The wine has bright green orchard apples, white blossoms, lemon flesh, and a treacle hit of salted caramel on the palate. The wine has deft and athletic on the palate with a creamy, fine-textured mousse. The wine has yellow apples, kumquat, and naartjie evolving with a touch of lemon meringue framing an iodine core. The wine has taut and true to 2019 growing conditions acidity is firm and cleansing, revealing white ginger root on the finish.
Traditional grape varieties of pinot noir and chardonnay are harvested inthe cool of the night. Krone Borealis is bottle-fermented and then matureson the lees in the underground cellar.
On the palate bubbles like silk,featherweight and buoyant, languidly wrap around winter melon, whitepeach, fresh pineapple. Wet crystal acidity, limpid and mineral, unwindsalong seams of coiled light. Extended lees time (18 months) and a lowerlevel of tirage layers on autolytic biscuity intensity, the satiny mousseribboning to mineral austerity.
