Description
This is a review of a clairin from the Chelo distillery. The clairin is aged for six months in a barrel that previously held whiskey, which gives it a slightly different flavor than a clairin that is not aged in whiskey. The clairin is gold in color and has a strong, heady scent with notes of lemon, nutmeg, spice, sugarcane, and cane sugar. The palate is lively and fresh with notes of pineapple, banana, grapefruit, lime, and cinnamon. The finish is long and precise with notes of sugarcane, vanilla, and chocolate. The clairin is 56.8% ABV and comes in a 750ml bottle.
Located north of Port-au-Prince in Saint-Michel de lAttalaye, the Chelo distillery was founded in 2004 by Michel Sajous to continue a halfcentury-old family adventure. On the 30 hectares of the property, it produces an extremely renowned clairin from a non-hybrid variety of sugarcane called Cristalline. Aged from June 2017 to November 2020 in a barrel that contained whiskey, this version bottled at its natural degree has preserved all the ardour of its early youth. Moreover, tenderly vanilla-scented, it also shows itself radiant with maturity and balance.

Nose: Rich, heady. Very finely liquoriced, the first nose is also freshly herbaceous and fruity (lemon). When aired, strong spices( nutmeg) rub shoulders with more medicinal notes (musk, sinaposm). Gradually sugarcane and cane sugar rise to the surface of the aromatic palette
Palate: Both lively and fresh. Exotic(pineapple, banana) the attack in the mouth is in turn marked by notes of green liquorice. The mid-palate is subtly fruity and candied (grapefruit, lime).The finish is tenderly spicy (cinnamon, ginger).
Finish: Long, precise. Evocative the beginning of the finish literally transports us to the time of the sugarcane harvest. At the same time, succulent vanilla and chocolate flavours bring a lot of sweetness and the flesh to the texture of the taste palette. The finish is fibrous (sugarcane) and aromatic ( verbena, thyme) The empty glass reveals notes of puffed rice and custard.
