Description
The Ashbourne Sandstone wine is a blend of white wine made from the sandstone-derived soils in the Hemel-en-Aarde Valley. The wine is free from excessive varietal fruit and focuses on bright minerality, salinity, and vibrant natural acidity. The wine is coated by a full and gentle viscosity derived from wild yeasts. The wine was made by the family for over three decades and has a rating of 8.5 out of 10 on Wine Enthusiast.
This innovative wine was the first South African wine to be fermented and aged in amphorae. While it remains by design a wine of texture ahead of forward fruit, Ashbourne Sandstone has subtle aromas of fresh-cut green apples, pear pith, lime and lime zest, with hints of jasmine.
The palate is intense and more linear, electric and lemony, with a particularly marked salinity and a beautiful mineral spine.
The finish is chalky and dry, beautifully balancing the amphora and wild yeast generated viscosity. If there was to be a definitive cool, maritime South African white blend, thiswine would be a very strong contender.
