Description
Old Cellar is a rich and smooth Barleywine Ale that showcases the intense flavors of barley. It was made using a traditional method called parti-gyle mashing, resulting in a complex blend of malt flavors such as apricot, vanilla, raisins, and nuts. The extended boil, fermentation, and aging process add a fruity and savory dimension to the beer, with a dry finish from the use of Centennial and Cascade hops. This strong ale is perfect for winter and can be aged for up to 20 years. It has an ABV of 12.4%, an IBU of 42, and comes in a 340ml bottle. It is brewed and bottled at Soul Barrel Brewery in Paarl.
Old Cellar is a silky, luxurious Barleywine aged for two years with a solera barrel aging method, in first a bourbon, then a dessert wine barrel. It displays the most intense expressions of barley malt & barrel.
Brewed with a largely forgotten brewing tradition called parti-gyle mashing, it utilizes the sweetest, most concentrated grain sugars. An extended boil, intense fermentation and long barrel aging on lees add a spirited, savoury dimension and an oily, warming body. The complex barrel aging creates a deep and intense barrel character.
This extravagant ale will keep you warm in winter and is best enjoyed by the fire with a book. Old Cellar can be aged for up to 20 years.
