Description
This famous old house of Cognac was first founded by an Irishman, James Delamain, in Jarnac in 1759. Since being revived in 1924, the producer has become famed for its unrelenting commitment to producing Cognac of the highest quality.
This is no exception, and in fact, raises the already incredibly high standards set by the Delamain Pale and Dry XO. Vesper is an extra-special XO Cognac, strictly produced using grapes from the Grande Champagne region. The average age of this Cognac is an incredible 35 years old. After individual maturation, the separate eau-de-vieux are married together in casks for another 2 years, which ensures an excellent integration of flavour and poise. The bottling takes its name from Vesper, the sixth canonical hour, which is celebrated with song and evening prayer. The spirit is said to recall this worshipful hour with its depth and intensity, whilst 6pm also marks the perfect time to sit back with a glass of Cognac in quiet reflection.
Delamain Vesper is a staggeringly delicious offering, with rich umami notes of earth, toffee and salted caramel on the nose, gently accompanied by raisins, floral sultanas and vanilla. The palate is rich with custard, prunes, stewed pears and chewy, dense grape flavours. With the finish comes a remarkable woodspice, dusty oak and mahogany quality, lingering for several minutes.
